For example, is it different for asset tracking, library management, warehouse management and so forth?

There are different types of RFID middleware, and not all middleware does exactly the same things. But in general, you can use the same middleware for different applications, since the main function is to format the data coming from the reader and deliver it in a way that can be used by the RFID or back-end application.
