I am unaware of any company that provides education specifically about how to produce RFID cards and labels. I would suggest you contact some transponder manufacturers, as they might be willing to educate you in the hope that you will eventually buy transponders from them.
RFID Journal publishes a lot of information on the uses of radio frequency identification, but if you are looking for market-size data, I would suggest you contact ABI Research, Frost & Sullivan or VDC Research. These firms sell reports discussing the current market size and expected growth.
