Where could I learn about trends for the last five to 10 years, with future forecasts? Will the per-tag price reach 1 cent?

David,
I am unaware of any such pricing forecasts, though I doubt tag prices will change that much. You can buy passive UHF RFID inlays for approximately five cents apiece in large quantities. I don't see tag prices falling much further than that, given the cost of silicon and the expenses involved in creating antennas and assembling inlays. The only way I could see tag costs falling to 1 cent would be if there were a breakthrough in printed electronics so that circuitry could be printed on packaging.
