It's a bit sad that we have come to the point where we have to protect items in churches from being stolen.
I guess you could set up a solution to constantly monitor items and then have that system sound an alarm in the event that an item were removed from the read field. A company called SimplyRFID offers an out-of-the-box system called NOX that allows a user to monitor items via RFID and a video camera. If an object is stolen, the user can search the video recording and determine what happened to it.
There are other ways to develop a solution that would help alert security if items were pilfered. A good systems integrator could put together a system, depending on the specific church's requirements.
