With any RFID deployment, regardless of the environment, you need to have a professional systems integrator conduct a site survey to identify potential problems, such as sources of electromagnetic interference or the presence of metal, which could affect an RFID system's performance. The integrator should be able to recommend a solution designed to overcome such issues. I have seen many deployments in environments containing metal racks, all of which were able to use RFID to achieve their goals. So I do not believe the presence of metal racks will be a huge issue, but a site survey should tell you that for sure.
